Sicilian Orange Salad

A little savory, a little sweet -- this scintillating side is all good, and it's good for you.
The combination of oranges and onions come together to make a downright delicious dish. Start your meal off on the light note with this succulent salad.

Ingredients
3 navel oranges
3 blood oranges
1 medium red onion, sliced into paper-thin rings
8 large fresh basil leaves, shredded
3 tbsp. extra-virgin olive oil
Freshly ground black pepper

Methods/steps
Peel the oranges, and remove all the pith. Slice into 1/4-inch-thick rounds. Arrange the slices on a large, shallow platter. Lay the onion slices on top of the oranges and sprinkle with the shredded basil. Drizzle the olive oil over the salad, and season generously with black pepper. Cover and let stand at room temperature for at least 2 hours before serving for the flavors to marry.


This salad looks so good!!!!

I plan on trying this recipe. It definitely seems like a spring/summer salad. Maybe for lunch.

Becky's Chicken Salad

Ingredients

2 1/2 cups diced and chilled, cooked chicken meat
1 cup chopped celery
1 cup sliced, seedless grapes
1/2 cup sliced almonds
2 tablespoons chopped fresh parsley
1 teaspoon salt
1 cup mayonnaise
1/4 cup heavy whipping cream

Directions

In a medium bowl, whip cream to soft peaks.
Combine meat, celery, grapes, almonds, parsley, salt, and mayonnaise with whipped cream. Chill.
