| This is a recipe my husband used to make for us. A huge favorite!! It calls for 2-3 pounds of beef stew meat, onion gravy seasoning (or mushroom gravy ), stew seasoning, and several different kinds of canned vegetables. I use green beans, yellow beans, peas, carrots, corn, and diced potatoes. Baby corn works well too. You can also add diced onion. You brown your stew meat and then add the veggies. Don't drain them, as the water in the veggies will help in mixing in the seasonings. It will make a lot, so be prepared for leftovers!! It is very good and very easy! A very easy meal and one that is very good on the budget. | |

| Hi, I made this one up and everyone seems to like it - especially the vegitarians
1 package corn tortillas - soft, not crispy 1 can refried or black beans 1 can (S&W) "santa fe" beans - often on sale 1 jar salsa or 1 cup homemade salsa 2 ears corn niblets or 1 can corn 1-2 cups shredded cheddar optional - 1 tomato diced, 1/2 jalapeno', seeded and fine diced, 1 green onion chopped, 1 lime squeezed you can add seasoned ground beef or chicken or pork if desired
Prep: about 5 minutes Best to use baking dish or lasagne' pan
To Make: Use 2-3 corn tortillas on the bottom, overlapping, then 1-2 in between layers 1st layer up: refried or black beans, some cheese,1/4 jar salsa, onions?, cover with more tortillas 2nd layer up: corn, tomato?, 1/2 lime juice, salsa, tortillas 3rd layer up: santa fe beans, cheese, Jalapeno?,more cheese, more salsa, more tortilla 4th layer up: remainder of ingredients, rest of lime juice Top with last of tortillas, cheese and salsa (make sure the tortilla edges are covered with salsa or cheese, otherwise they'll burn)
To Cook: You can microwave or bake this. Microwave for 15-20 minutes on high - the top won't brown, but it will cook through, if to mushy, cook another 5-10 minutes - should be semi-solid If Bake, 350 for 1/2 hour, cover with foil for about 10 minutes, then remove to brown cheese.
Makes between 4-8 servings and freezes for 3 months, covered. Obviously, use as much cheese and salsa as desired - BUT - beware using too much juicy ingredients and salsa as it can get mushy. Enjoy! | |

| Hey you guys thanks for the help with recipes. As bad as my memory is, I forgot to tell you guys something. (Geez, there's a surprise.) lol When you post recipes here in Budget Meals, along with servings it makes, I also need an approximate cost to make. This is from the myrazzles.com recession proof recipes as an example: BBQ CHICKEN 1 pkg. Leg quarters =4.99 2 bottles BBQ sauce =2.00 3 cans Corn =1.50 Option A: Put unfrozen chicken in slow cooker. Add 2 bottles BBQ sauce, and 1/2 cup water. Cook on low 7 hours, or high 5. OPTION B: Boil chicken on high until done. Drain all except 1/2 cup. Add 2 bottles BBQ sauce plus the 1/2 cup chicken broth. Simmer on low until well heated. Heat corn, add salt, pepper and butter. COST: $8.49
**You don't have to itemize the ingredients as I have, but if you could give me an overall cost guesstimation that would be wonderful. Thanks so much. | |

Here's a copy of something from Sandra Lee's "Money Saving Meals" site
"$ Tip: Buy things in season when you can. If it's out of season, shop for it in the frozen section.

We all love a good sale! Name brand products are on sale in the beginning of the month (when families have just been paid) and private label store brands go on sale at the end of the month (when families may have less in their budget). $ Tip: Expiration date: There is a misconception that you have to throw food away.
Fact: The date is just a "for-sale by date." These items are good for five more days. $ Tip: Invest in a slow cooker; running a slow cooker costs $0.02 per hour.
$ Tip: Know when to substitute expensive ingredients for less expensive ones.
For example, for my Slow Cooker Cheese Cake, I used ricotta costing me $1.67 vs. Cream Cheese at $3.75. I saved $2.08 or 55%. $ Tip: Measuring ingredients accurately is an important aspect of saving money.
