This looks really refreshing, but for those who have allergies to walnuts like myself, just use one that you can have. Im going to try this one myself.

Pomegranate Salad

Sick of the same old salads? Then you won't take these great-tasting greens for granate.... pomegranate that is. Finally, a salad that won't leave you starving or disappointed. Give it a shot tonight.



Ingredients

Dressing

1/2 cup pomegranate juice

2 tbsp. extra virgin olive oil or walnut oil

1 garlic clove, finely minced

1/2 tbsp. brown sugar, packed



Salad

2-4 oz. fresh parmesan cheese

Fresh ground pepper

1/2 cup toasted walnuts, chopped

12 cups spinach or other lettuce

2 persimmons, peeled and cut into wedges

1 pomegranate, seeded

Basil (optional)





Methods/steps
Mix the dressing ingredients.

Get the pomegranate seeds out. Mix the salad ingredients and toss with dressing.

Mohala, you always have the best recipes. Poms are not only really good for the immune system, but also good for your skin.

A chef friend of mine told me about an easy way to get Pom seeds out:
1. lightly roll the pom skin on the counter - like a lemon or lime
2. put the whole pom in between two bowls (rounded ends out and held together at the edges)
3. shake the Pom in the bowls with intensity for about 30 seconds
4. cut in half, turn inside out and the seeds should just pop right out

Also, my mom used to peel Persimmons just like a tomato - fork and dunk into boiling water for a few seconds then peel

Thanks Shamashe. And thanks for the info on how to get the the seeds out easy. I would never have thought about getting the seeds out in this manner.
