I was reading a post from Mohala about Apricot Jam, and wanted to share some things I use Apricot Jam for.

Rock Cornish Hens- I add a little bit of butter and heat it in the microwave until I can easily brush it on my hens. I use this to glaze my hens and stuffing. (Sometimes bread stuffing, sometimes wild rice stuffing. Tastes great on both.)

Cocktail Smokies- I usually use bbq sauce. At our holiday family gathering I realized I had no bbq sauce, but I did have Apricot Jam. So, I used it. We will never use bbq sauce again. It's so much better.

I would have never thought about using apricot jam in those ways. Sounds good though, and Im always loking for new ideas. Plus I like Apricot Jam and food can become so boring at times. Im going to try your idea.

Yum! Also, I accidently did this today. I dropped a large spoonful of apricot jam into scrambled eggs, so I mixed them together and just threw in some cheese too, then spread it onto toast, if I had made it I could have probably dropped into bacon or ham as well. Sort of a breakfast scramble spread. I must say it was pretty tasty - I love Apricot Jam (see favorite foods game) :-))

Just saw this somewhere - use an egg slicer to cut strawberries or bananas into thin slices! :-)) Cool!
